Honey Garlic Chicken with Broccoli + Rice
Serves 5
Ingredients
Chicken + Broccoli
• 2 lb chicken breast, cubed
• 1 Tbsp garlic powder
• 1/2 tsp black pepper
• 1 tsp crushed red pepper
• 1/4 cup flour
• 4 to 5 Tbsp olive oil, divided
• 3 to 4 cups broccoli florets
• Salt and pepper, to taste
• Sesame seeds, for serving
Sauce
• 2/3 cup soy sauce
• 1/4 cup fresh lemon juice
• 6 Tbsp honey
• 1/4 cup minced garlic
• 1/4 cup sliced scallions
• 2 Tbsp sesame oil
• 1/3 cup gochujang
For Serving
• White rice (5 servings), cooked
Instructions
1. Prepare the rice
Cook white rice according to package directions for 5 servings. Set aside.
2. Preheat and prep
Preheat oven to 450°F. Line a large baking sheet with foil or parchment paper.
3. Season the chicken
Add cubed chicken directly to the baking sheet. Sprinkle with garlic powder, black pepper, and crushed red pepper. Toss to coat evenly.
Sprinkle flour over the chicken and toss again until evenly coated. Drizzle with 4 Tbsp olive oil and mix well.
4. Add the broccoli
Push the chicken to one side of the pan. Add broccoli to the other side. Drizzle broccoli with remaining olive oil and season with salt and pepper.
5. First bake
Bake for 15 minutes.
6. Make the sauce
While the chicken bakes, whisk together all sauce ingredients in a bowl until smooth.
7. Sauce the chicken
Remove the pan from the oven and transfer the broccoli to a bowl or plate.
Pour the sauce over the chicken only and toss to coat. Return to oven and bake for 5 minutes.
8. Finish
Remove pan, toss chicken again so the sauce coats evenly, and bake an additional 5 minutes until the sauce is sticky and caramelized.
9. Serve
Plate rice, top with chicken and broccoli, spoon extra sauce over everything, and finish with sesame seeds.
